🥣 Ingredients

  • 1 pack (400g) Viola ready-to-cook chickpeas, drained (reserve ½ cup chickpea water)
  • ¼ cup high-quality tahini
  • 2–3 tbsp fresh lemon juice
  • 1 small garlic clove (or half for a lighter flavor)
  • 2–4 tbsp chickpea water (aquafaba) or very cold water
  • 2–3 ice cubes (for extra creaminess)
  • ¼ tsp ground cumin
  • Salt to taste
  • 2 tbsp extra virgin olive oil for serving
  • Paprika + sumac + chopped parsley for garnish (optional)

👨‍🍳 Preparation Steps

  1. In the blender, add Viola ready chickpeas with tahini, lemon juice, garlic, cumin, and half of the salt.
  2. Add the ice cubes and 2 tbsp chickpea water, then blend until smooth.
  3. If the texture is thick, add more chickpea water or cold water, one spoon at a time, until you reach the desired creaminess.
  4. Taste and adjust salt and lemon as desired. (Optional) Strain the mixture through a fine sieve for a silky texture.
  5. Pour the hummus into a serving dish, create a shallow swirl with a spoon, and top with olive oil, paprika, sumac, and parsley.

  • Chickpea water (aquafaba) gives better smoothness and consistency than regular water.
  • Adding ice while blending brightens the color and gives a lighter, airy texture.
