🥘 Ingredients

  • 3 cups washed and soaked basmati rice (30 minutes)
  • 500 g lamb or chicken pieces
  • 3 tbsp Fork & Spoon vegetable ghee
  • 2 large chopped onions
  • 2 peeled and chopped tomatoes
  • 2 grated carrots
  • 2 tbsp tomato paste
  • 1 hot chili pepper (optional)
  • 4 cups hot water
  • Salt to taste

🌶️ Spices

1 tsp cumin
1 tsp turmeric
1 tsp Bukhari spice mix
4 cardamom pods
3 cloves
1 cinnamon stick
2 bay leaves

👩🏻‍🍳 Preparation Steps

  1. Heat the Fork & Spoon vegetable ghee in a large pot over medium heat.
  2. Add the onions and sauté until golden.
  3. Add the meat or chicken and cook until browned.
  4. Add the tomatoes, tomato paste, spices, and carrots, and mix well.
  5. Pour in the water and let it boil until the meat is partially cooked.
  6. Add the rice and cook until most of the liquid is absorbed.
  7. Reduce the heat, cover the pot, and let it finish cooking.
Tip: For enhanced flavor, lightly sauté some grated carrots in a spoon of Fork & Spoon ghee and serve on top.

  • Do not stir the rice too much during cooking.
  • Soak the rice for 30 minutes before cooking.
